The Zucchini Pie Adventure

Let me just say that my kids didn't step, they jumped into the kitchen when we made our fabulous Zucchini Pie. It isn't that I haven't let them help in the kitchen before, because I have! It's just that I usually let them do the pouring and the stirring because I'm afraid of them getting cut. So when I presented them with a set of knives and tools that they could use on their own they were thrilled to utter pieces. The handles are designed to be no slip and easy for smaller hands to work with. The blades on the knives are serrated and have a blunt tip, which is great for cutting food but not little fingers! Best of all everything is dishwasher safe making clean up a breeze.

We started our Zucchini Pie adventure with the following ingredients:

3 cup zucchini, sliced paper thin
1 small onion, chopped
1/2 cup Swiss cheese, cubed
4 eggs
1/2 cup oil
1/2 cup Bisquick mix
1/2 tsp. salt

The kids loved using their new cooking tools to peel the zucchini, chop the onion and cube the cheese, while I took over to slice the zucchini paper thin with my grown up cooking tools. They got to work again beating the eggs, oil and Bisquick for one minute. Then we added the yummy zucchini, cheese and onions. The entire mixture was poured into a pie plate and then we had to wait an agonizing 35 minutes while it cooked (350 degrees F). It came out a golden brown and smelled oh so delicious!

My daughter had as much fun eating the pie it as she did making it and asked if she could rate it a 10. While my husband and I both gave it 5 spoons rating (our highest!) and it will return to our dinner table!

The kids LOVE the fact that they have a knife made just for them and mom lets them do some of the cutting now!
